What you need:

1 cup cooked brown rice (from 1⁄3 cup raw)

125 g can corn kernels, drained

100 g shaved ham, finely chopped

1 small red capsicum, finely diced

1 small carrot, finely diced

1/2 cup finely chopped pineapple

Balsamic Dressing

How to:

1. Mix together all ingredients except dressing in a large bowl.
2. Add balsamic dressing just prior to serving.
